This is better than oatmeal for lowering cholesterol. It raises the good HDL cholesterol while lowering HDL. Eat 3 a day 20 minutes before meals.
One needs a blender or food processor to mill the bran into a fine flour. You can make the muffins without it, but they will be extremely crumbly and won't stick together. Put the entire box of oat bran into a blender or food processor and grind it until it makes a fine powdery flour. You will not need the entire box, but it will save having to do it the next time you need the flour.
This came from a book called The 8-Week Cholesterol Cure by Robert E. Kowalski. It is well worth reading. It explains the various research that was done on the subject of Cholesterol and oat bran. It also has a number of recipes to try out.
The Recipe:
2 1/4 cups oat bran cereal
1/4 cup chopped nuts (walnuts, pecans, or even peanuts.)
1/4 cup raisins, dates, currents or whatever
1 tablespoon baking powder (not baking soda)
1/4 cup honey or molasses or 1/4 cup brown sugar
1 1/2 cups skim milk or evaporated skim milk
2 egg whiles or egg substitute for two eggs
2 tablespoons vegetable oil
Preheat the oven to 425 degrees f. In a large bowl, combine the oat bran cereal, nuts, raisins and baking powder. Stir in the brown sugar or liquid sweetening. Mix the milk, egg whites, and oil together and blend with the oat bran mixture.
Line muffin pans with paper baking cups and fill with batter. Bake 15 to 17 minutes. test for doneness with a toothpick. it should come out moist but not wet. Makes 12 large muffins.
Store in a plastic bag to retain moisture. Keep the muffins in the refrigerator if they will not be consumed within 3 days, as they contain no preservatives.
These muffins are not sweet. Some people don't care for them. I like them much better than oatmeal. They are kind of like cornbread with raisins and nuts. Since I am no longer eating sweets, I look forward to them because they are a tiny bit sweet if your taste buds aren't jaded. Eating them for 8 weeks will bring your cholesterol down a certain amount. The longer you eat the muffins, the more it brings down the cholesterol.
They are really filling. If you have the habit of eating before you go to bed, one of these muffins is really satisfying.
Once you get the flour milled, they are quite easy to make. I might make the dry ingredients into a mix to cut the time even more. Then all you have to do is put in the liquids.
