Today I'm preparing a Boston Butt pork roast. I poke holes in the meat and insert thin slivers of fresh garlic, then rub the outside down with Tony Chachere's Louisiana seasoning. I then make about eight slices almost halfway through the meat, cutting from the top, and stuff the cracks with sauteed onions and peppers. I'll put this in a Dutch oven add a cup of water, cover and bake at 300 degrees for 4-5 hours. I'll then uncover the roast, turn the heat to 475 and brown the roast thoroughly before serving.

We're going country here today too.... Chicken n Dumplings.....good day for it cold and dreary.   Lat night was more gourmet.....

Steak in which I then deglazed the pan with red wine, sauteed fresh garlic, shitake mushrooms, campari tomatoes and shallots, with some fresh tarragon.  Rice with saffron, cumin and other spices, Asian coleslaw....(cabbage with a dressing of black sesame seeds, fish sauce, sesame oil, rice vinegar, soy sauce and some asian chili sauce, pinch of sugar.

Roast chicken thigh/leg quarters, sprinkled with just a bit of Mrs. Dash (great stuff) and drizzled with garlic butter.

Side dishes: My own homemade version of Rice-A-Roni, along with some fresh mustard greens.

We generally eat light on Sunday. Plus, I don't think I've completely digested the dinner I had at Chili's last night.  :devilish:

Have you havd Chilli's lettuce wraps?? I love them.. :smitten:

The koreans have a great lettuce wrap, you take either bacon (not the kind we eat) or Bulgogi (spciy pork), some rice and either shrimp paste or fish paste and wrap them in lettuce.  You make them individually as you eat.

Those sound good.

Speaking of Korean, one of my favorite things is fried pork chops with kimchee on the side.

What is Kimchee?

Fermented vegetables, usually a mix of Chinese cabbage, hot peppers and onions. You make it like you do sauerkraut.
