Autumn olive jelly

Today's creation Autumn olive jelly.



We have a lot of these on one area of the farm,  probably several acres of them.  Evidently the deer and bear like them because while I was picking them I saw bear droppings and deer foot prints.

Approx 1 1/2 gallon berries
9 cups sugar
Sure gel 1 package

wash berries,  place in pot adding about 2 cups water cook down for about 20 minutes stirring and mashing with potato masher.  Strain and strain again Thr cheese cloth.  It's ok to be a little pulpy

Strain out 7 cups juice and place in pot with sure gel.  Pre measure out the 9 cups sugar and set in bowl
Heat the 7 cups juice till it comes to a boil that you can't stir down.

add sugar (all of it)
stirring constantly cook till it comes to full rolling boil and let boil stirring the whole time for 1 minute.

Remove from stove and pour in jelly jars

water bath filled jelly jars for 4 minutes

It has a very pretty almost cranberry color and reminds me a bit of crab apple jelly because it is sweet and tart at the same time.

I've never heard of autumn olives. Do they grow on a bush or tree? They look kinda like what we used to call ground cherries.

The jelly you described made me think of the apple jelly my mother used to make. She canned peeled and sliced apples, and kept the peelings to make jelly. The apples hadn't been sprayed, so no danger of chemicals. That apple peel jelly was so good on toast with butter - I thought it tasted kinda like honey.

A bush.  The bush can get about 20-25 foot tall.  The berries are small,  smaller than a grape and a bit tedious to pick.  They have very sharp thorns like a crab apple tree.    Evidently I managed to get several in my hands because my hands are so sore from the thorns it woke me up.   :roflmao: :roflmao: :roflmao:  Jelly turned out good though.  :thumps:

Yeah,  it spreads like crazy.  We brush hog it every year and for every one plant cut two grow back.  LOL

We have to spray it out of our fields but let it grow on some steeper unusable property that needed erosion control.

Makes some pretty tasty jelly though.
